sweet potatoes and cute critters
when the weather turned cooler, I was inspired to sew with my wool again. The rain dripped all weekend, keeping me inside with slurpy soups, sewing machines and critters that make me smile! The following soup recipe kept me warm and toasty all weekend. CURRIED SWEET POTATO CHOWDER 2 T chopped fresh ginger, 2 garlic cloves, minced, 2 tsp sesame oil, 1 tsp curry powder, 1/2 tsp Chinese Five Spice, 6 cups good quality vegetable stock, 4 medium sweet potatoes, peeled and chopped, 1/2 can coconut milk, 1/4 cup plain yogurt, 1 1/2 tsp lime zest. 1/4 cup fresh lime juice, 1/4 cup chopped green onion, 3 T chopped fresh cilantro. In large soup pot, saute ginger and garlic for a couple minutes. Add veggie stock and sweet potato, bring to a low boil, reduce heat, then simmer about 20 minutes till potato is tender. Add coconut milk, yogurt, zest & lime juice. heat thoroughly, but do not boil. Remove soup from heat and add green onion and cilantro.

oh my, i love love love those little owls. please tell me you sell them somewhere. they are precious! and the soup sounds delicious - it's just chilly enough and rainy to give that a try this week. :)
